We would drive to Phoenix often to eat there. I would usually get a combination, with a taco, enchilada and tostada. I can say how it was in the past the tacos could get soggy in the styrofoam container touching the beans and rice. For this review I just got tacos and they came wrapped. I ordered myself 1 beef taco and the wife 1 beef taco. After eating a few bites, I thought the beef did not look right, then I realized I got a chicken taco. In 30 seconds or so they had me a beef taco. So I was not planning on doing a chicken taco review. At this time the restaurant is not as busy as I remembered. I would always called a head my order and pick it up in the take out line, because the line was like at Disneyland. They had 5-10 people working taking orders. 25-30 people you could see making food. Right now 2 people taking orders and 4 people making food. With that being said, the quality of the food did not disappoint. They also have an app now for ordering. My beef and chicken reviews are very close as the tacos are very similar.
Carolina’s Crispy Beef Taco Review
Appearance = 1.8 / 2 - It looks amazing, just beautiful
Tortilla = 1.8 / 2 - Great texture, taste and that perfect crisp.
Meat / filling = 1.8 / 2 – The beef was just the right consistency. Not dry, but not too wet that you are covered in its drippings.
Sauce = 1.8 / 2 - There is only one type of sauce, and it is a medium sauce. It is one of those amazing sauces you dream about. I have been trying to get a copycat recipe to make this at home for years so I could maybe make it a little bit less spicy. In doing research, I found that the mother who made the recipe keeps it locked in a safe and does not trust anyone to see the recipe. Makes sense, I would do the same if I had this amazing of a recipe for salsa. This visit the sauce was just the right spice for me. I do say the sauce is a little too spicy for my kids.
Value = 1.6 / 2 - $3.65 seems to be on the more high side for a non sit down restaurant style place, but I noticing other places are close to this. The other places may not have as good of a product too.

Carolina’s Crispy Chicken Taco Review
Appearance = 1.3 / 2 – It was beat up. The shell was still whole, just pieces missing so it was only a cosmetic problem. Which I is not the reason I came to get a taco. Either way I am judging on looks.
Tortilla = 1.8 / 2 - Great texture, taste and that perfect crisp.
Meat / filling = 1.8 / 2 - The chicken was really good, I pick beef or chicken, but this chicken was moist and flavorful.

Carolina’s
Ambiance = 7 / 10 - It is a new build or pretty serious remodel so everything feels new and looks good. Be able to see the people making your food adds to the feel and everyone wants to see how and who is preparing their food.
Service = 7.5 / 10 - The service is good. They did give me the wrong taco, but they gave me the correct taco within 30 seconds. No hassle at all.
