Kenny’s Taco























Kenny’s Tacos
It is a taco I have had my whole.  Some may gut say it is like a Jack in the box taco, that may be a far stretch.  
The tacos are name after my Dad Kenny.  They were a family favorite my whole childhood.  They were a special occasion type of dinner.  I’m the 80s and 90s my parents used lard to cook them.  So they were a little unhealthy back then.  Now we used cooking spray such as Pam to cook them.  Lard was pretty awesome.  It brought the tacos to the next level.  I had a group of friends over in the 90s and we would have taco eating contest.  My friend Ward ate like 27 and I at 24.  Ward passed way from cancer.    He will always be the taco champion.  I will never attempt to eat that many.
We always go to the Sand Dunes for Thanksgiving week.  2 of the nights we made Kenny’s tacos.  
Directions
About 1 oz ground hamburger add salt and pepper as cooking or add it to the meat as you spread it.
Spread on Arizona brand corn tortillas (can use other brand but won’t get as crispy)
I think it gets crispier on an outdoor grill with a griddle, but you can cook inside on a electric griddle.  
Using a good spatula makes it easier.  
Each time you flip the tacos keep spraying with cooking spray.
We prefer using El Pato on these tacos and heat it up.  I like the green can best.
